@gedeonm @Ronnie @CStamp reduction in sugar is key. You need enough sugar for the pectin to interact with and make it thick, but too much and you nuke that glorious tartness.
Making cranberry relish is so easy. Bag of berries, water to cover, 1/3-1/2 cup sugar… then simmer/cook down until they all burst. You can’t really over-cook it. You can add other stuff (lemon or orange zest, Cointreau, etc) as desired.
